Merlin’s is Coleg Sir Gâr’s training restaurant nestled within the college’s Pibwrlwyd campus in Carmarthen.
Working in the restaurant helps students develop the confidence and skills in professional cookery and hospitality to prepare them for the industry in which they are striving to succeed.
Merlin’s offers spectacular menus for the public over the course of each academic year. Generally, the restaurant is open Wednesday lunch times from 12pm to 2pm and Thursday evenings from 6pm to 8.30pm but throughout the year special events are held. You can look forward to events that celebrate the likes of Valentines, St David’s Day and international cuisine.
A typical dinner menu could include a starter of goat’s cheese, caramelised onions and pine nut salad, followed by pan fried sea bass served on a tagliatelle bed, with ginger, chilli and spring onion tossed in a tomato salsa, with a desert of home-made apple and rhubarb crumble with vanilla custard.
Our students have won many awards for their cooking and hospitality skills competing on a local, national and international level. Many former students have worked in London and worked in Michelin starred hotels with the likes of Gary Rhodes, Gordon Ramsay and Marco Pierre White. The restaurant also has close links with industry and invites guest chefs from some of the top establishments in the area to work on special menus for the public which also helps broaden the experience of our students.
