Programme Description

Channel your passion for food into a rewarding year of personal growth and skills development.This course practical based course is ideal for students who want to develop their confidence and their communication skills. You will also learn the skills and techniques needed to start a career in culinary arts or hospitality. The course is a gateway into one of the fastest growing industries both locally and nationally. The majority of students use this course as a stepping-stone to a Level 2 programme in Professional Cookery or Hospitality and Tourism.  Others learners to progress to an apprenticeship or employment. The course will provide opportunities to develop a range of personal skills and techniques, essential for successful performance in working life

Programme Features

A central element of the course is the work related experience. All learners run the service at Merlins, the on site training restaurant. Here you will gain a realisticview of the demands of working in the catering industry in a safe and supportive environment. You will be taught culinary and food service skills by experienced staff through lively demonstrations and practical skills sessions. The hands on experience in the training restaurant provides ample opportunity to put these skills into practice. 

Progression and Employment

You will have plenty of support in developing your customer service and kitchen skills and techniques, and your experiences on the course will help you understand the tpathways open to you in the industry. Successful completion of the course will enable you to progress to higher-level courses such as the Level 2 Professional Cookery programme, which includes food and beverage service, or the Level 2 Hospitality and Tourism courses. Learners can also progress to an apprenticeship.

Programme Content

On a Level 1 Certificate in Hospitality course you will study a variety of restaurant and kitchen units. The core units focus on food safety, hygiene and working effectively as a team. Other units cover topics such as preparing and cooking meat, fish, pultry, vegetables and eggs, cooking bread products, preparing food and drinks and preparing and serving food at the table.

Literacy and numeracy are important for all students. Students who do not have a C grade or above in Maths, English or Welsh (first language) will have additional teaching and support to study either GCSE or Essential Skills depending on current level.

Method of Assessment

Units are assessed through observation of practical work in Merlins restaurant and successful completion of underpinning knowledge questions. These questions can be in written format or recorded using media platforms.projects, or extended writing.

Entry Requirements

You will need a minimum of two GCSE grades D-G to study this course.
