This course is ideal for students who want to progress their culinary skills. It is a route into one of the fastest growing industries both locally and nationally. The majority of students use this course to progress directly into employment or to the level three professional cookery course.
Learners will complete a level two certificate in hospitality and catering principles as well as the level two diploma in professional cookery.
Learners will prepare a wide range of complex dishes that will allow you to develop knife skills, and knowledge of a variety of cooking methods and food preparation techniques used in the kitchen.
A range of mandatory and optional units will be assessed in the workplace along with end of unit knowledge questions which will be both written and answered on a digital platform.
Successful apprentices have the opportunity to progress onto the level 3 apprenticeship programmes.
Professional cookery units are assessed by observation of practical tasks in the workplace and knowledge-based questioning which may be written or on digital platforms.
No formal training or experience required however, a level one qualification in hospitality and catering is desirable. Learners with prior relevant industry experience will also be considered.
Learners who do not have a D grade or above in maths and English will be expected to sit the level one Essential Skills in Application of Number and Communication in order to pass the apprenticeship. All apprentices must also complete regular skills updates/targets in application of number, communication, digital literacy and Welsh regardless of level on entry.
Apprentices will be expected to purchase a full set of chef whites. Additional tools such as a knife set may be required.
