This practical based course is ideal for students who want to develop their confidence and their communication skills and you will also learn the skills and techniques needed to start a career in culinary arts or hospitality.

The course is a gateway into one of the fastest growing industries both locally and nationally.

The majority of students use this course as a stepping-stone to a level two programme in professional cookery and professional food and beverage skills.

Other learners progress to an apprenticeship or employment.

The course will provide opportunities to develop a range of personal skills and techniques, essential for successful performance in working life.

Programme Features

A central element of the course is the work related experience. All learners are expected to run the service at Cegin Sir Gâr, the onsite training restaurant. Here you will gain a realistic view of the demands of working in the catering industry in a safe and supportive environment. You will be taught culinary and food and beverage service skills by experienced staff through lively demonstrations and practical skills sessions. The hands-on experience in the training restaurant provides ample opportunity to put these skills into practice. 

Programme content

On this course you will gain a Diploma in Professional Cookery and a Certificate in Food and Beverage skills. As part of the course you will study a variety of restaurant and kitchen units. The core units focus on food safety, hygiene and working effectively as a team. The units that you will be covering include:

  • Introduction to employability in the catering and hospitality industry
  • Food safety in catering
  • Introduction to healthier foods and special diets
  • Cooking methods; such as boiling, poaching and steaming, baking, roasting and grilling.
  • Bar service
  • Dealing with payments and bookings
  • Understanding and planning menus
  • Hot beverage skills 
  • Food and beverage service skills

Literacy and numeracy are important for all students. Students who do not have a C grade or above in maths, English or Welsh (first language) will have additional teaching and support to study either GCSE or Essential Skills depending on their current level.

Progression and employment

You will have plenty of support in developing your customer service and kitchen skills and techniques, and your experiences on the course will help you understand the pathways open to you in the industry. Successful completion of the course will enable you to progress to higher level courses such as the Level 2 Professional Cookery and Food and Beverage Service Skills, or learners can also progress to an apprenticeship. 

Method of assessment

Units are assessed through assessment of practical work both within the kitchen and the restaurant through observation of practical work in Cegin Sir Gâr and successful completion of underpinning knowledge tests and written assignments.

This qualification is available to be assessed through the medium of Welsh and English.

Entry requirements

You will need a minimum of three GCSE grades at D to G to study this course, good references and a successful interview. Those without formal qualifications will be considered following an interview, references and entry test.

Additional costs

All learners are required to pay an administration fee of £25 prior to enrolment. All students will need to purchase a kit for mandatory use during practicals and service which includes appropriate kitchen whites and front of house uniforms. This can be ordered through the catering department.

You will need to provide your own stationery and may also incur costs if the department arranges educational visits.
