Channel your passion for food into a rewarding year of skills development and culinary creativity. This course is ideal for learners who want to further develop their practical skills and confidence in the kitchen environment. It is an excellent gateway into one of the fastest growing industries both locally and nationally.

The majority of learners use this course as a progression onto a level three programme in professional cookery or a level three hospitality supervision and leadership which can be provided on a full or part-time course or an apprenticeship.

Programme Features

The core units focus on:

  • effective teamwork
  • food safety and hygiene
  • preparing and cooking meat, fish, poultry and vegetables
  • making stock soups and sauces.
Programme content

You will have the benefits of training at our onsite kitchen at our Pibwrlwyd Campus one day per week. A range of practically based units will be assessed in the workplace.

Progression and employment

Apprentices benefit from earning while they are learning at their employment site. There are often a variety of employers based locally looking to provide apprenticeship opportunities to learners. Often apprentices may be offered employment on completing their apprenticeship. Many apprentices go straight into employment or return on a full-time course/apprenticeship at a higher level.  

Method of assessment

Units are assessed by observation of practical tasks and knowledge-based questioning which may be written or on media platforms. Regular assessment will take place in the workplace.

Entry requirements

Literacy and numeracy are important for all apprentices. Learners who do not have a D grade or above in Maths and English will be expected to sit the level 1 Essential Skills in Application of Number and Communication to pass the apprenticeship. All apprentices must also complete regular skills updates/targets in Application of Number, Communication, Digital Literacy and Welsh regardless of level on entry.

Additional costs

Apprentices will be expected to purchase a full set of chefs’ whites. Additional tools such as a knife set may be required.
